Substitution Solutions
Note: fruit purees and juices contain enzymes and can affect the outcome of the recipe. Juices greatly enhance the rise of breads.
Milk, Green Valley Organics makes terrific lactose free products. Go Here!
Replace 1 cup cow's milk with one of the following:
Lactose free milk
1 cup soy milk (plain)
1 cup rice milk
1 cup water
1 cup coconut milk
1 cup goat's milk, if tolerated
1 cup hemp milk
Some recipes require milk. An example would be popovers which will not rise without milk. For gluten free popovers you need a flour blend without xanthan gum.
Buttermilk
Replace 1 cup buttermilk with one of the following:
1 cup alternative milk + 1 tablespoon lemon juice or 1 tablespoon white vinegar (Let stand until slightly thickened.)
Almond Milk, Soy Milk, Rice Milk, Hemp Milk, Coconut Milk, Goat Milk
I've used goat milk yogurt thinned with a bit of milk or water in place of buttermilk.
Yogurt
Replace 1 cup yogurt with one of the following:
Lactose free yogurt
1 cup soy yogurt, goat milk yogurt or coconut yogurt
1 cup soy sour cream
1 cup unsweetened applesauce
1 cup fruit puree
Butter, Please read Butter vs. Shortening because the results will vary, especially in cookies.
Replace 8 tablespoons (1 stick) butter with one of the following:
Green Valley lactose free butter
8 tablespoons goat milk butter
8 tablespoons Earth Balance Organic Coconut Spread
8 tablespoons Earth Balance (Non-Dairy) Buttery Spread
8 tablespoons Spectrum Organic Shortening or Nutiva Superfood shortening
8 tablespoons vegetable or olive oil
I often add a good quality butter flavoring when using shortening or margarine. Natures Flavors organic butter flavor link.
For reduced fat:
6 tablespoons unsweetened applesauce + 2 tablespoons fat of choice
Nuts
Remember that Daonuts contains almonds.
Replace tree nuts or peanuts with an equal amount of the following:
Toasted coconut
Sunflower seeds
Toasted sesame seeds
(use only 2 to 3 tablespoons)
Crushed cornflakes
Crushed crispy rice cereal
Crushed potato chips
Pumpkin seeds
