Olive Oil Cake
This simple cake recipe is astoundingly light with a tender crumb.
I use this recipe for many flavors of cake. See Notes below for chocolate, strawberry, cardamom cake with berries.

Take Note: This cake is darker in color than a white flour cake due to the almond, flax and millet flours.
For cake:
1 1/2 cups Queen Bee Cake, Cookie, Muffin Blend
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. Salt
3/4 cup granulated sugar (See Notes)
1 cup plain yogurt OR Fake Buttermilk = non-dairy milk of choice with 1TB vinegar or lemon juice added . If making lemon or lime cake, just add juice to milk. If making orange cake, add 1Tb lemon juice to milk.
1/3 cup olive oil
2 eggs, room temperature
2 tsp. Lime, Lemon, Or Orange zest
2 Tbsp. Lime, Lemon, Or Orange juice
1 tsp vanilla or almond extract, I use almond extract for a Lime Cake
Directions
Oil one 8" square or round cake pan. Dust with tapioca starch or line with parchment paper and oil paper.
Preheat oven to 350 degrees.
Combine all dry ingredients and sugar.
Combine yogurt or non-dairy milk with zest, juice, and vanilla or almond extract. Set aside.
Whisk together eggs and olive oil. Add to the dry ingredients along with yogurt or non-dairy juice mixtures.
Whisk batter until smooth.
Pour batter into prepared pan and bake for 40 minutes.
Cool on wire rack for 15 minutes before removing from pan. Allow to cool completely before frosting or glazing.
Chocolate Cake
Reduce yogurt to 3/4 cup, or fake buttermilk non-dairy milk of choice with 1TB vinegar or lemon juice added
3 Tb cocoa powder dissolved in 3 Tb very hot water or hot coffee; allow to sit for a few minutes.
Strawberry Cake
Take Note: This cake is darker in color than a white flour cake due to the almond, flax and millet flours.
Add 2-3 Tb ground freeze dried strawberries to dry ingredients. You can also buy freeze dried strawberries and powder in a blender.
Cardamom Cake with Berries
Add 2 tsps cardamom to dry ingredients.
1 cup fresh or frozen blackberries, blueberries, raspberries, or mixed berries. Slightly mash and fold into better.
For Glaze
1 cup powdered sugar; sift if lumpy
2 Tb water water
1 Tb olive oil, more to adjust consistency
Chopped fresh mint to garnish
in a small bowl, whisk war water and powdered sugar until smooth. Slowly whisk in olive oil until mixture is the consistency of thick honey. Add more olive oil, 1 tsp at a time, to adjust consistency as desired. Drizzle glaze over top of cake before serving, then top with additional berries and fresh mint.
