Queen Bee Muffin Recipe
Adapted from Betty Crocker recipe
Makes one dozen muffins. Lots of variations below.
2 cups Queen Bee Cake, Cookie, Muffin flour
1/8 tsp Expandex, optional but yields a great texture. It's different than regular tapioca starch.
1 Tb baking powder
1 tsp salt
1 egg
3/4 cup milk or milk alternative
1/2 cup oil
1/3 cup sugar
Preheat oven to 400°
Line standard muffin tins with paper liners or use silicon muffin pan.
In large bowl, whisk together Queen Bee CCM flour, salt, baking powder, sugar.
In separate bowl, whisk egg, milk, oil and any flavorings you decide to use such as orange flavoring, vanilla, coffee flavoring etc. See variations below.
Stir wet ingredients into dry until just blended. Now add any dried fruits, choc chips or nuts. Do not over mix.
Fill muffin cups just under 3/4 full. Dip ¼ measuring cup in hot water, fill with batter and it will slip right into the muffin cup. The batter may thicken as you fill the cups, but do not worry about this. If necessary, smooth the tops by dampening your fingers with cold water.
Bake until golden for 18 to 20 minutes. Check at 15 minutes, if they begin to brown too quickly simply cover pan with foil and return to oven.
Insert toothpick to make sure they are done (no batter clings to toothpick)
Cool in pan about 5-7 minutes.
Variations
Blueberry Lemon Muffins
1/8 tsp nutmeg, add to dry ingredients
2 tsp lemon flavoring, add to liquids
Stir into batter, 1/2 to 2/3 cup dried blueberries (Trader Joe's Freeze Dried Blueberries are a good option)
French Muffins
Mix ½ cup sugar with 1-2 tsp cinnamon. Brush entire muffin with melted butter and roll entire muffin in cinnamon sugar.
Cardamom Ginger Muffins
Add: 1 ½ tsp cardamom, ½ tsp ginger to dry ingredients.
1 Tb jarred grated ginger, 1 tsp lemon flavoring to wet ingredients.
Optional: top with sugar and slivered almonds.
Orange Almond Muffins
Add: 2 Tb orange zest, 2 tsp orange flavoring to liquid ingredients.
Top muffins with slivered almonds and cinnamon sugar prior to baking.
Orange Cranberry White Chocolate Chip Muffins
Add: 2 Tb orange zest, 2 tsp orange flavoring,1 tsp vanilla to liquid ingredients.
Stir in batter 1/3 cup chopped dried cranberries, 1/3 cup white chocolate chips.
Substitute half of the milk with orange juice if desired.
Cardamom Muffins with Dried Apricots or Golden Raisins
Add: 1 1/2 tsp cardamom to dry ingredients.
Stir into batter 1 cup chopped dried apricots or golden raisins.
Optional: 1 tsp lemon flavoring.
Spice Muffins
Add: 2 tsp cinnamon, ½ tsp allspice, ¼ tsp ginger, ¼ tsp nutmeg to dry ingredients.
Add 1 tsp vanilla to wet ingredients.
Optional ½ cup chopped walnuts.
Brush tops of warm muffins with melted butter/margarine and dip in cinnamon sugar.
Cinnamon Sugar: ¼ cup sugar 1-2 tsp cinnamon.
