Queen Bee Lemon Brownies
The perfect cross between a brownie and a lemon bar!
Make half recipe using 8 x 8” square pan.
Brownies
1 ½ cups Queen Bee Cake, Cookie, Muffin flour
1 tsp baking powder
1 ½ cups sugar, Sugar Alternatives
½ tsp salt
10 tablespoons butter, melted & slightly cooled
3 large eggs
1 can sweetened condensed milk
½ tsp vanilla extract
2 Tb fresh squeezed lemon juice
1 tsp packed lemon zest
Glaze
1 cup powdered sugar, sifted
3 Tb fresh squeezed lemon juice
1 tsp packed lemon zest
Preheat the oven to 350ºF. Spray oil a 9×13″ baking dish then line with parchment paper so there is a paper overhang. Spray oil parchment paper. This facilitates easy removal.
In a large bowl, whisk together the Queen Bee CCM flour, baking powder, sugar & salt.
In a separate bowl, whisk together the melted butter, sweetened condensed milk, eggs, vanilla, lemon juice & zest until combined.
Mix the butter mixture into the flour mixture until well combined.
Spread the batter into the prepared baking dish and bake for 25-35 minutes until set and just golden brown. A toothpick inserted in the center should come out mostly clean.
Let the bars cool slightly in the pan before glazing.
Glaze
In a small bowl, whisk together sifted powdered sugar, fresh-squeezed lemon juice, and packed lemon zest until smooth.
Pour over the lemon brownies, using a pastry brush to spread to the edges. Let sit at least 2 hours before serving. To harden glaze, refrigerate.
