Queen Bee Cinnamon Apple Bread Pudding
8-9 cups Queen Bee Bread or 15 Queen Bee biscuits, cubed
1 cup raisins or 1 cup diced green apples
1 cup chopped pecans
2 ¼ cups milk or buttermilk
1/2 cup butter or margarine, melted
4 eggs
3/4 cup sugar
¼ cup brown sugar
1/2 tsp nutmeg
2 Tbs vanilla
1/2 tsp cinnamon
Combine
3 Tbs sugar
1 Tb cinnamon
Whiskey Glaze
¼ cup whiskey (I used Jack Daniels) optional
1-2 cups of powdered sugar, depending on what desired consistency
OR
1 ½ cups powdered sugar
¼ cup milk or milk alternative
1 tsp vanilla or almond flavoring
Preheat oven to 350º Grease well with butter or spray oil, a 9x13 pan.
Cut biscuits/bread into cubes and place in large bowl with the raisins or apples and pecans. Whisk together the next eight ingredients and pour over biscuits/bread. This mixture will be soupy. If using bread, push bread under milk mixture, then bake. For biscuits or any dense bread, let sit in frig for 20 minutes.
Pour into baking dish, cover with foil and bake at 350º for 25 minutes. After the first 25 minutes, sprinkle top sugar/cinnamon. Return to oven. Bake 20 minutes more UNCOVERED.
Drizzle with whiskey glaze while still warm.
