Queen Bee Chocolate Covered Marshmallow Cookies

1/2 recipe Queen Bee Simple Chocolate Chip Cookies Recipe w/o the chocolate chips
¼ cup cocoa powder, sifted
1 pkg large marshmallows, I used Dandies Vegan Marshmallows
Chocolate Glaze
3 Tb butter, melted
3 Tb cocoa powder
1 Tb organic corn syrup, I use Wholesome Sugar brand
½ cup powdered sugar, sifted
1-2 Tb milk or cream
In a hurry? Try Ghirardelli Dark Chocolate Melting Wafers. Melt in top of double boiler or heat-safe bowl sitting over the pan of slightly simmering water. Do not over heat the chocolate or it will appear dull instead of shiny (not hotter than 120°). You can also melt in a microwave.
Directions
Whisk the cocoa powder into the Queen Bee Cookie Mix then follow directions on the bag.
Chill the dough for about 2 hour.
Preheat the oven to 350°. Line two cookies sheets with parchment paper.
Cut the marshmallows in half with scissors and set aside.
Roll dough into 1” balls and press into a small disc on cookie sheet. Place 2” apart.
Bake for 10 min or until just set. Do not over bake the cookies. They will look under-done when taken out of oven. Gently press marshmallow half on top of each cookie while they are still hot.
