Queen Bee Baked Donuts
This batter will keep for 2-3 days in the refrigerator.
You will need two non-stick donut baking pans. Lightly greased or spray oiled
A pastry bag or cupcake injector fitted with the largest tip.
A pastry brush.
Donuts freeze well. Wrap individual donut in plastic wrap. Place all wrapped donuts in plastic freezer bag.

Donuts:
3 cups Queen Bee Cakes, Cookies, Muffins Flour
2 ½ tsp baking powder
¼ tsp baking soda
¾ tsp salt
½ tsp nutmeg
1 ½ sticks butter, room temperature – not too cold or too warm. Somewhat firm but soft enough to poke a finger into.
¾ cup + 2 Tb sugar
2 eggs, room temperature
¾ cup + 1 Tb milk or milk alternative
2 Tb buttermilk or yogurt
Cinnamon Sugar:
8 Tb butter
1 cup sugar
1 Tb cinnamon
Preheat oven to 350°
Whisk together Queen Bee CCM Flour, baking powder, baking soda, salt and nutmeg. Set aside.
Combine the milk and buttermilk or yogurt.
Using a stand mixer, cream the butter and sugar until the mixture increases in volume and is pale yellow. This helps to incorporate air into the batter and can take up to five minutes.
Beat in the eggs one at a time until just mixed in.
With a spoon, stir in a quarter of the dry ingredients into the butter mixture. Then mix in a third of the milk mixture. Continue mixing in the remaining dry and wet ingredients alternately, ending with dry. Mix until well combined – do not overmix.
Fill pastry bag or cupcake injector with the batter and fill donut cup halfway. Really try not to overfill. The batter will not spread to the sides of the cup. Don't worry; it will during baking.
Bake for about 17 minutes until tester comes out clean.
IMPORTANT: Cool the donuts for 12 minutes before removing from pans. They will be somewhat soft out of the oven and become more solid as they cool.
To finish:
On a low temperature, melt the butter for coating the donuts.
Combine the sugar and cinnamon.
When the donuts are cool enough to handle, brush them all over with the melted butter and then roll in the sugar/cinnamon.
Spice Cake Donuts
Add to dry ingredients:
1 1/2 tsp cinnamon
1/2 tsp each: nutmeg, ginger, black pepper, cardamon
Pinch of cloves
Add to butter/sugar mixture: 1 1/2 tsp vanilla
