Queen Bee Green Chili, Cheddar Scones
If you do not live in New Mexico, you can order Santa Fe Ole Roasted Green Chili here . I like this brand because of it's intense flavor that won't be lost in the baking process. The Santa Fe Ole 'Hot' is definitely hot. I use the medium. Or buy a six-pack at Amazon.
You can use drained, canned green chili, but I promise you it will not have the authentic New Mexico flavor. If you don't like chili, you can leave them out.
FYI, here in New Mexico we eat green chili on just about everything; steak and eggs, just eggs or omelettes, quiche, meatloaf, tacos, for enchiladas or mexican casseroles, stirred into soups and stews, on grilled cheese sandwiches and burgers, stirred into mayo or ranch dressing, on taco salads. I've even made green chili powder cookies with pistachios for Christmas. Oh, and of course, in Christmas stuffing.
