How to combine alternative sweetners
For Low glycemic version use any combination of organic sugar, sugar alcohols like erythritol (Swerve) or Xylitol and coconut palm sugar plus a bit of stevia powder concentrate (erythritol, xylitol and coconut palm sugar are 70% as sweet as sugar, so I add a bit of stevia). You could use liquid stevia added to liquids in the recipe. Be careful with Stevia as it can leave a bitter aftertaste if you add too much.
You cannot use only Stevia to sweeten baked goods. Sugar provides texture; stevia does not.
Stevia Powder Concentrate can be purchased at Amazon. Here's one. This is extremely sweet and a bag lasts a long time.
I prefer erythritol because it does not have the laxative effect of Xylitol.

Erythritol, stevia and xylitol have a zero glycemic index.
Example: if recipe calls for 2-1/2 cups of sugar: Blend together, 1 C erythritol, 1 C coconut palm sugar, ½ C organic sugar, 1/16 tsp stevia powder.
Of course, you can create any combination you desire. You could use 2 ½ cups erythritol if diabetic. NOTE: If you eat alot of erythritol in a day you will have a gurgly stomach. Just as Xylitol has a laxative effect, a gurgly stomach is a potential side effect of erythritol.
AGAIN, Erythritol, stevia and xylitol have a zero glycemic index.
Coconut Palm Sugar is brown and tastes a bit like brown sugar so I often use it in place of brown sugar.
CPS can darken your baked goods a bit so if you are making a white cake and you want it to be as white as possible then don't use CPS. Your 'white' cakes are not going to be as white as white flour because Queen Bee Flour contains almond meal and flax.
Coconut Palm Sugar is about 30 on the glycemic index. Now available in mainstream stores like Smiths, as well as, most natural, organic markets like Natural Grocers, Sprouts, Whole Foods and even Trader Joe's now carries this at a great price.
